A traditional Satay sauce for chicken, beef or pork. Also great
as a stir-fry sauce.
2 tbsp. peanut oil
3 cloves garlic, crushed
1 cup Landis Natural Peanut Butter
¼ cup lime juice
¼ cup lemongrass, minced
2 chiles, finely chopped
1 can unsweetened coconut milk
¼ cup packed brown sugar
3 tbsp. soy sauce or fish sauce
1 tbsp. fresh cilantro, finely chopped
Heat the oil in a medium sauce pan and saute the garlic until golden brown.
Add the rest of the ingredients, stirring until the peanut butter is thoroughly mixed in. Simmer for about 10 minutes, stirring often.
If a smoother consistency is desire, allow to cool and process in a blender.
Serve as a dip with chicken, beef or pork, or as a marinade or stir-fry sauce.
Servings - about 3 to 4 cups
